Full Job Description

Head Chef – FIFO

We are looking for an experienced and reliable Head Chef to manage the day-to-day kitchen operations at a small remote site.

The site caters for approximately 10–15 people. This is a hands-on role involving daily cooking and meal service, as well as menu planning, purchasing, stock management and kitchen budget control.

Key Responsibilities

Prepare and serve breakfast, lunch and dinner for approximately 10–15 people
Take responsibility for the day-to-day operation of the site kitchen while remaining fully hands-on with food preparation, cooking and meal service
Plan weekly menus based on site numbers and operational requirements
Cater for dietary requirements where required
Manage the purchasing and ordering of food, ingredients and kitchen supplies
Plan purchases according to actual site consumption and ensure sufficient supplies are maintained
Monitor food costs and manage kitchen expenditure within the approved budget
Manage stock levels, inventory, storage and replenishment
Minimise food wastage and make effective use of existing stock
Source food and kitchen supplies cost-effectively while maintaining quality standards
Maintain high standards of kitchen cleanliness, hygiene and food storage
Ensure food preparation, storage and kitchen operations comply with food safety, hygiene and HACCP requirements
Maintain basic purchasing, stock, food safety and kitchen operational records
Work independently and coordinate effectively with the small site team
Adjust menus, purchasing and kitchen arrangements as required to meet changing site needs

Requirements

Must hold a Certificate III in Commercial Cookery or an equivalent Australian-recognised chef qualification
Food Safety Supervisor Certificate is preferred
Must hold a valid National Police Check
Must have valid Australian working rights and hold a valid working visa
Previous experience working as a Chef
Previous FIFO, remote camp or small site kitchen experience is highly regarded
Experience in menu planning, food purchasing, stock management and cost control
Strong understanding of budgeting and the ability to manage food and kitchen supply costs
Good knowledge of food safety, kitchen hygiene and HACCP requirements
Strong organisational skills, reliability and the ability to work independently
Comfortable working in a remote location and within a small team
Good communication skills and flexibility to adapt to changing site requirements

Pay: $35.00 – $45.00 per hour
