Full-Time | Salary: $80,000 + Super

We are seeking an experienced and passionate Sommelier to join our Food & Beverage team at From Here by Mike and help deliver an exceptional dining experience for our guests.

In this role, you will be responsible for curating, managing, and delivering a world-class wine program in partnership with the General Manager of Restaurants. You’ll bring deep wine knowledge, outstanding guest engagement skills, and a strong commercial mindset to elevate both service standards and beverage performance.

Beyond wine, you’ll play a key leadership role on the restaurant floor, supporting daily operations and providing leadership in the absence of the Manager.

About the Role

Wine & Beverage Program Management

Maintain a comprehensive and commercially successful wine list aligned with the venue’s concept and clientele
Source, evaluate, and procure wines from local and international suppliers
Monitor inventory levels, stock rotation, and storage conditions to maintain quality and cost control
Manage cellar operations including storage, labelling, and organisation

Guest Experience & Service

Provide tailored wine recommendations based on guest preferences and menu selections
Deliver professional tableside wine service, including decanting and presentation
Enhance the guest experience through engaging storytelling and product knowledge
Manage guest feedback and resolve beverage-related service issues
Support the day-to-day operations of the restaurant floor

Training & Leadership

Train and mentor Food & Beverage team members on wine knowledge, service standards, and upselling techniques
Conduct regular tastings and educational sessions
Support junior team development while driving a culture of continuous improvement
Provide operational leadership in the absence of management

Commercial & Operational Performance

Drive beverage sales through strategic recommendations and upselling
Assist the General Manager of Restaurants in analysing sales performance and profitability
Support beverage cost control, pricing strategies, and supplier negotiations

Compliance & Standards

Ensure compliance with RSA requirements, licensing laws, and company policies
Maintain hygiene, safety, and service standards in line with brand expectations and regulatory requirements

About You

You will bring:

A formal qualification in hospitality, wine studies, or a related field
Minimum 2 years’ experience as a Sommelier or in a senior wine-focused role within a hotel or fine dining environment
Demonstrated experience managing wine programs and supplier relationships
Advanced knowledge of global wine regions, varietals, vintages, and production methods
Strong food and wine pairing expertise
Excellent communication and guest engagement skills
Leadership capability with a passion for training and mentoring teams
Strong commercial acumen and attention to detail
