We're now looking for a Sommelier who loves great hospitality just as much as great wine.
At CIRCL, our sommeliers are more than wine experts—they're storytellers, educators and hosts. You'll work alongside a passionate team to guide guests through one of Australia's most celebrated wine programs, creating memorable food and wine experiences while making every guest feel welcome, whether they're a seasoned collector or simply curious to discover something new.
Key Responsibilities
· Working collaboratively with the Sommelier team, develop and update the wine list, ensuring it reflects the latest trends, premium producers, and CIRCL’s unique wine philosophy.
· Provide expert advice to guests and staff on wine selections, pairing recommendations, and tasting notes to enhance the dining experience.
· Lead wine service, including tableside presentation, decanting, and ensuring correct glassware and serving temperatures.
· Conduct regular staff wine trainings, tastings, and ongoing education to ensure team knowledge and engagement.
· Maintain and manage the wine cellar, including inventory control, stock rotation, and procurement, while ensuring optimal wine storage conditions.
· Liaise with suppliers and winemakers, source new wines, and negotiate purchasing agreements.
· Organize and host wine events, tastings, and dinners, acting as CIRCL’s ambassador for passionate wine storytelling and guest connection.
· Monitor and report on wine sales, costs, and performance metrics for continuous improvement.
· Assist with broader beverage programs including Champagne, spirits, and non-alcoholic options when required.
Requirements
· Extensive restaurant experience, with demonstrated ability to deliver high-touch service in a busy environment.
· Ideally formal wine qualifications (e.g., WSET, CMS, ASI, or equivalent) and/or substantial industry experience preferred.
· In-depth understanding of Australian and international wine regions, producers, vintage variation, and wine styles.
· Exceptional communication and presentation skills, with ability to tailor advice to a diverse clientele.
· Skilled in cellar management, cost control, and procurement.
Pay: $80,000.00 – $90,000.00 per year
