Position Details – Trade Waiter (Sommelier)
As a Sommelier, you’ll work alongside industry leaders in a hands-on, fast-paced, and creative role. You’ll help shape our beverage culture, train and lead the team, manage stock, and deliver exceptional guest experiences - all while enjoying a flexible roster and career progression.
A Trade Waiter (Sommelier) is responsible for:
Trade Waiter;
· Adhering to the business’s presentation standards, service procedures and service times.
· Ensuring guests are met and greeted to a standard that will deliver a positive first impression.
· Ensuring guests needs and expectations are met.
· Delivering superior levels of service to ensure repeat business.
· Ensuring the dedication to the delivery of friendly, professional service.
· Ensuring all guests’ requests and questions are dealt with promptly and to the guests’ satisfaction
· Ensuring that all guests are served in a timely fashion.
· Building ongoing rapport with regular guests to ensure repeat business.
· Monitoring the quality of food and beverages being delivered.
· Ensuring that an appropriate level of technical skills are demonstrated to guest.
· Ensuring the responsible service of alcohol policies are adhered to.
· Ensuring that any customer complaints are handled professionally or referred to the supervisor or manager on duty.
Sommelier;
· Beverage Knowledge & Technical Wine Service
· Wine List Curation & Beverage Program Development
· Procurement, Supplier Relationships & Industry Representation
· Cellar Management & Stock Control
· Wine Training & Staff Development
· Sales, Upselling & Guest Beverage Experience
Position Requirements
· A minimum of 3 years in wine buying or senior sommelier roles, ideally in restaurants of a similar calibre
· Enthusiasm to build relationships in service with our community of guests
· A trained and astute palate with sound fault analysis, open to wine styles both classic and contemporary
· Formal qualifications such as WSET, Court of Master Sommeliers or equivalent knowledge are highly valued; curiosity essential
· Deep and broad knowledge across Australian and international wine regions, and producers benchmark and emerging
· A talent for discovering expressive, distinctive wines that excite both seasoned collectors and curious newcomers.
· An understanding of the commercial contribution of the beverage program and the levers that ultimately drive its success
· Knowledge that can comfortably guide guests through the great wines, vineyards and regions of the world
· A service-driven ethos with an eye for detail whose passion and charming service offers an exceptional experience to our guests
Salary
$75,000 to $85,000 annual base salary
Pay: $75,000.00 – $85,000.00 per year
