The Role
We're looking for a genuinely passionate Sommelier to elevate our wine and beverage offering to the next level. Reporting to the Head of Food & Beverage, you'll take ownership of the Club's Wine and Beverage operations — with wine as your true focus — delivering a seamless, memorable experience for members and guests every service.
The Sommelier will primarily work in the dining room from Tuesday to Saturday, with flexibility to work additional shifts as required for special events, functions, or operational requirements.
What You'll Do

Partner with the F&B team to craft perfect pairing recommendations that showcase every wine at its best.

Collaborate closely with the with the Executive Chef and Head of Food and Beverage to support the overall dining experience and beverage operations as well as the Restaurant and Bar Manager.

Play an active role on the Wine Sub Committee, keeping our wine menu ahead of member expectations, attending WSC meetings and taking meeting minutes as required.

Host and present Club wine events that bring our offering to life.

Build the team's wine knowledge through hands-on training and mentoring.

Lead by example, fostering a values-driven, caring team culture.

Manage stock and inventory including ordering, wine list curation (including vintage rolls), and beverage POS

Own key supplier relationships
Essentials
-
Sommelier experience in a hotel or hatted restaurant environment
- Excellent communication and relationship-building skills, with genuine personability
- Confidence across MS Office, restaurant management systems, POS, and OpenTable
- WSET Level 3 minimum (or CMS Advanced)
- A real passion for hospitality and a finger on the pulse of industry trends, with the drive to bring new ideas to life

Proven experience managing inventory and writing wine menus
