JUNIOR CHEF / CHEF DE PARTIE

Mudo Dining & Bar – South Yarra, Melbourne

ABOUT MUDO

Mudo Dining & Bar is a modern Australian restaurant with a Korean influence, located in South Yarra.

Our food is built around seasonal Australian produce, live-fire cooking and Korean flavours and techniques, including fermentation, doenjang, gochujang and other elements of Korean cuisine.

We are a small, hands-on kitchen where the team works closely together. Rather than simply following recipes and repeating the same dishes every day, our chefs are involved in prep, service, menu development and learning how to build dishes from the ground up.

Mudo is a growing restaurant, and we are looking to build a strong kitchen team as we head into the busier summer period.

ABOUT THE ROLE

We are looking for a Junior Chef / Chef de Partie to join our kitchen team.

This role would suit someone who already has some commercial kitchen experience and is looking to take the next step in their career.

You don't need years of fine dining experience.

We are particularly interested in chefs who have worked in cafés, pubs, hotels or franchise restaurants and now want to learn more about modern dining, cooking techniques, plating, flavour development and running a section.

You will work closely with our Head Chef and senior kitchen team and have the opportunity to develop your skills through real service and menu development.

WHAT YOU'LL LEARN & BE INVOLVED IN

Depending on your experience, you will have the opportunity to learn and take responsibility for:

Modern Australian cooking
Korean-inspired flavours and techniques
Fermentation and Korean sauces
Wood-fire cooking
Sauce and stock preparation
Meat and seafood preparation
Vegetable preparation and seasonal produce
Plating and presentation
Running your own section
Service organisation and timing
Menu development
Prep planning and kitchen organisation
Working as part of a small, professional kitchen team

We want to help the right person progress from Junior Chef into a confident Chef de Partie.

WHO WE'RE LOOKING FOR

We are looking for someone who is:

Passionate about cooking and wants to improve
Reliable and punctual
Positive and respectful towards the team
Comfortable working in a busy kitchen
Willing to learn and take feedback
Able to work cleanly and efficiently
Interested in modern restaurant cooking
Available to work weekends
Has previous commercial kitchen experience

Experience in dining or Korean cuisine is not essential.

Attitude, work ethic and willingness to learn are more important to us than having a perfect CV.
