Cook Brisbane’s best birria — and learn to run a kitchen from a chef who trained at the top.

4 day working week!

SoCal Tacos serves modern Southern Californian Mexican cuisine out of a brand-new central kitchen at Flat Lizard Brewing in Stafford. Our birria is regularly rated among the best in Brisbane, and every cut of meat on the menu comes off “Charlotte” — our smoker — low and slow. Two trucks work markets and festivals across South East Queensland, we’re booked out for the rest of the year, and demand keeps climbing. That’s why we’re hiring.

This is a genuine step up for a competent sous chef — or a sharp junior sous ready for real responsibility. You’ll cook alongside Chef Gus, SoCal’s owner and head chef, and when he’s not on, you’ll run the show.

Who you’d work under

Chef Gus brings 20 years in acclaimed London kitchens, including roles under Gordon Ramsay, Tom Kerridge, Tim Allen and Anthony Dimitri. For the right person that’s the real draw: proper mentoring and high-level technique — from low-and-slow smoking to genuine kitchen discipline — in a kitchen small enough that you’ll actually absorb it.

What you’ll do

Run day-to-day service and the kitchen whenever Chef Gus is off-site
Execute the menu — from the birria to the smoker — with real consistency
Order stock, and receive and cross-check deliveries
Manage and develop the junior kitchen hands
Stay on top of the day-to-day paperwork and food-safety standards
Lend a hand at the occasional event (the role’s kitchen-based, but the trucks are part of the family)

What we offer

Full-time, salaried — $70,000pa
A four-day week: 4 × 10-hour days — three days off, every week

What you’ll bring

Experience as a sous or junior sous in a busy professional kitchen
The maturity to lead a shift, manage juniors and hold standards under pressure
A real care for consistency and craft
Food Safety Supervisor certificate (preferred)
Driver’s licence (preferred, not essential)
A love of proper BBQ or modern Mexican food is a bonus — we’ll teach you the rest
