Queensland Parliamentary Catering Services is seeking an enthusiastic and experienced Sous Chef to join our team. Working within the iconic Parliament House precinct, you will assist the Executive Chef in delivering outstanding culinary experiences across a range of dining environments, including fine dining, banquets, functions, and casual dining outlets. Key Objectives
Deliver high-quality food preparation and cooking across all catering operations.
Support the Executive Chef in menu planning, costing, inventory management, and kitchen operations.
Lead and develop kitchen staff while maintaining exceptional food safety and service standards.
Your Role
Undertake all aspects of food preparation, cooking, and presentation to a high standard.
Assist with menu planning, recipe development, costing, and implementation of new menu items.
Support stock ordering, inventory control, and waste reduction initiatives.
Coordinate the activities of Chefs, Apprentice Chefs, Casual Chefs, and Kitchen Staff.
Provide training, coaching, and ongoing support to develop team capability.
Assist with rostering to ensure staffing levels align with business requirements.
Monitor and maintain food safety, hygiene, and workplace health and safety standards.
Contribute to a positive team culture through professional leadership and collaboration.
Deliver exceptional service with a strong focus on guest and Member satisfaction.
What We're Looking For
Trade qualification as a Chef (mandatory).
Minimum three years' experience as a Chef in a leadership role.
Experience across fine dining, banquets, functions, and casual dining environments.
Strong knowledge of menu planning, costing, inventory management, food presentation, and kitchen operations.
Demonstrated leadership skills with a commitment to mentoring and developing others.
Excellent communication and interpersonal skills with a collaborative approach.
Creativity and passion for producing innovative, high-quality dishes.
Strong customer focus and commitment to continuous improvement.
Good working knowledge of Microsoft Word, Excel, and Outlook.
