Full Job Description

Sushi Nova DFO Pty Ltd is a modern Japanese sushi restaurant located at Brisbane Airport DFO. We specialise in fresh sushi, Japanese cuisine and fast-paced customer service, providing high-quality food and dining experiences to our customers.

We are currently seeking an experienced Full-Time Chef to join our team.

The successful candidate will play an important role in the planning, organisation and preparation of Japanese sushi and cuisine dishes while maintaining high food quality and kitchen standards.

Main Tasks and Duties:

* Planning menus, estimating food and labour costs, and ordering food supplies

* Monitoring quality of dishes at all stages of preparation and presentation

* Discussing food preparation issues with managers, kitchen and waiting staff

* Demonstrating cooking techniques and advising on cooking procedures

* Preparing and cooking Japanese food and sushi

* Enforcing hygiene and food safety regulations

* Safely preparing and storing fresh and raw seafood ingredients

* Maintaining consistency and quality across all menu items

* Assisting with training kitchen staff where required

* Managing stock rotation and food storage procedures

Main Responsibilities:

* Reporting kitchen problems and incidents to management

* Ensuring equipment is cleaned and maintained according to health and safety regulations

* Evaluating food products to maintain quality standards

* Managing stock ordering and inventory control

* Receiving and storing stock according to business standards

* Preparing food for busy service periods and special dietary requests

Qualifications and Experience:

* Diploma level qualification in a related field or at least 3 years of relevant work experience as a Chef

* Experience in Japanese cuisine and sushi preparation preferred

* Strong understanding of food safety and kitchen operations

* Ability to work efficiently in a fast-paced environment
