Employment Type: Full-Time

Salary: $80,000 per annum + superannuation

Pasticceria Padova is an established Italian pasticceria and bakery specialising in traditional Italian pastries, cakes, biscuits and other freshly prepared baked products. We are seeking an experienced and qualified Pastrycook to join our team on a full-time basis.

About the Role

The successful candidate will be responsible for preparing, baking and finishing a range of high-quality pastry, cake and bakery products while maintaining the traditional standards and quality of the business.

Key Responsibilities

Prepare and produce a range of pastries, cakes, biscuits, buns and other baked products in accordance with established recipes and production requirements.
Weigh and measure ingredients accurately and assess the quality and suitability of raw materials.
Prepare pastry doughs, fillings, creams and other components required for pastry and cake production.
Knead, mix, roll, cut, mould and shape dough and pastry products using appropriate techniques and equipment.
Monitor proving, baking and cooling processes and adjust oven temperatures and baking times as required.
Prepare and finish Italian-style pastries, cakes and specialty products to a consistently high standard.
Decorate and finish cakes and pastries using cream, icing, glazes and other decorative elements.
Operate and maintain ovens, mixers, dough sheeters and other pastry production equipment.
Monitor the appearance, texture, consistency and quality of finished products.
Coordinate the preparation, baking, unloading, cooling and finishing of production batches.
Maintain clean and hygienic work areas, equipment, baking trays, tins and utensils.
Follow food safety, workplace health and safety and hygiene requirements.
Assist with daily production planning and ensure products are prepared within required timeframes.
Minimise wastage through appropriate preparation, storage and handling of ingredients.
Maintain consistent product quality and presentation in accordance with the business's standards.

Skills and Experience

The successful applicant must have:

A minimum of 2 years of relevant experience as a Pastrycook in a commercial bakery, pasticceria, pastry shop, café or similar food-production environment.
A Certificate IV in Patisserie/Pastry or a higher relevant qualification.
Demonstrated experience preparing and baking a variety of pastries, cakes, biscuits and other baked products.
Strong knowledge of pastry preparation, baking techniques, cake finishing and decoration.
Experience with commercial pastry and baking equipment.
Strong understanding of food safety, hygiene and workplace health and safety requirements.
Excellent attention to detail and commitment to product quality.
Ability to work efficiently in a busy production environment.
Ability to work independently and collaboratively as part of a production team.
Good organisational and time-management skills.
Ability to follow recipes, production schedules and established quality standards.
A genuine interest in traditional Italian pastry and bakery products will be highly regarded.
