Hobsons Bay Hotel is a modern pub and one of Williamstown’s renowned dining and function venues. Located at 28 Ferguson Street, Williamstown, it offers a relaxed and welcoming atmosphere for dining and drinks, with a menu featuring delicious food alongside an impressive selection of beer, wine and cocktails. With multiple bars, a balcony and a rooftop overlooking Williamstown Bay, it’s a great place to enjoy a meal, catch up with friends or unwind with a drink into the evening.
We seek applicants who:
- Have experience in putting high quality food on the pass and maintaining high standards in all areas of kitchen management.
- Have experience in planning menus, preparation, cooking, butchering, or pastry cooking as required.
- Have no issue with following directions.
- Are excellent multi-taskers with initiative to take the lead in improving kitchen efficiency.
- Possess a demonstrable passion for food.
- Have excellent inter-personal skills, maintaining a calm demeanour in high-pressure situations and use these traits to perform well in a team.
- Have leadership qualities with excellent time and management skills.
- Are Australian citizens or Australian PR.
Primary Tasks and duties will include:
- Planning menu and introducing innovative dishes in consultation with our Executive Chef
- Ordering food supplies and kitchen ingredients according to menu requirements and stock levels.
- Liaising with suppliers to place and confirm orders.
- Monitoring inventory to ensure adequate stock for daily operations.
- Receiving and checking deliveries for quality, quantity, and freshness.
- Food preparation and monitoring quality of dishes for both a la carte and function service
- Preparing and cooking food
- Demonstration of cooking techniques and advising on cooking procedures.
- Freezing and preserving raw, semi-cooked and cooked food
- Exercise responsibility for the direct supervision of other cooks and other kitchen/catering staff in the kitchen and other catering services, including allocation of duties, preparation of rosters, approval of overtime and training of all kitchen staff
- Monitor cleaning rosters and enforcing food hygiene practices in the kitchen.
- Ensuring rigorous implementation of OH&S policies.
- Managing the training and developing apprentice cooks and other staff in the kitchen and other catering services in consultation with our Executive Chef.
- Implementing workplace policies and procedures as directed by the Executive Chef or the café management.
- Implement OH&S policies rigorously.
- To perform all duties consistent with the Vision, Mission, Values and policies of Hobsons Bay Hotel and Statutory requirements.
The applicants for the position of Chef must hold AQF Certificate IV and AQF Certificate III in Commercial Cookery, and Skill Assessment from a relevant authority. The prospective Chef must have a minimum of three years of full-time, relevant work experience in a chef role, gained within reputable restaurants or cafés in Australia.
The advertised position of chef will be subject to probationary period of up to 3 months. This opportunity is perfect for an experienced Chef who have passion for food and cooking. This position is on a permanent long-term basis and will sit within an established team.
