About the role
Amalfi Fresh Pasta is seeking an experienced Sous Chef to join our kitchen team in Chadstone, VIC. This is a full-time position that offers an exciting opportunity to work in a dynamic hospitality environment where culinary excellence and authentic Italian cuisine are at the heart of everything we do. As Sous Chef, you will play a crucial role in supporting the Head Chef, managing kitchen operations, and ensuring the highest standards of food preparation and presentation. This position is integral to maintaining our reputation for quality and consistency, whilst contributing to the overall success of our establishment.

What you'll be doing

Assisting the Head Chef in planning menus and developing new dishes that reflect our authentic Italian culinary philosophy
Managing kitchen staff during service, including delegating tasks, providing guidance, and ensuring all stations maintain high standards
Preparing and cooking meals according to established recipes and plating standards, maintaining consistency and quality across all dishes
Monitoring food quality, freshness, and presentation, and taking corrective action where necessary
Maintaining strict hygiene and food safety standards in compliance with all relevant regulations and company policies
Managing inventory, monitoring stock levels, and assisting with ordering and supplier communications
Training and mentoring junior kitchen staff, fostering a positive and collaborative work environment
Stepping in as Head Chef when required, ensuring seamless kitchen operations during service
Contributing to cost control measures whilst maintaining the quality and integrity of our dishes
Identifying and implementing opportunities for operational efficiency and continuous improvement in the kitchen

What we're looking for

Minimum of 3-5 years' experience working in a professional kitchen, with at least 1 year in a Sous Chef or similar supervisory role
Comprehensive knowledge of Italian cuisine, including traditional pasta-making techniques and authentic preparation methods
Strong culinary skills with the ability to prepare a wide variety of dishes to a consistently high standard
Proven leadership and team management experience, with the ability to motivate and develop kitchen staff
Excellent communication and interpersonal skills, with the ability to work effectively under pressure during service
Sound understanding of food safety, hygiene protocols, and health and safety regulations
Demonstrated ability to manage budgets, control costs, and minimise waste without compromising quality
Problem-solving mindset with a proactive approach to identifying and addressing operational challenges
Flexibility with availability, including willingness to work evenings, weekends, and public holidays as required
A passion for food, continuous learning, and staying current with culinary trends and techniques
