Full Job Description

Lead a passionate kitchen in one of Fremantle's most iconic heritage cafes.

Moore & Moore Cafe is a well-established, award-winning cafe located within the beautiful heritage-listed Moores Building in the heart of Fremantle. We are known for our fresh, seasonal menus, exceptional coffee, vibrant events, and our signature Moroccan High Tea.

Our philosophy centres on quality, sustainability and hospitality. We proudly source local produce wherever possible, use free-range and organic ingredients, and cater to a wide range of dietary requirements including gluten-free, dairy-free, vegetarian, vegan and paleo.

We are seeking an experienced Head Chef to lead our kitchen team and continue delivering the high-quality food and service our customers have come to expect.

About the Role

Reporting directly to the Cafe Manager and owner, you will oversee all kitchen operations, leading a talented team while maintaining consistency, creativity and efficiency across our daily café service, Moroccan High Tea, weddings, corporate functions and private events.

This is a hands-on leadership position suited to someone who enjoys both cooking and managing people in a busy, fast-paced environment.

Key Responsibilities

Lead the daily operation of the kitchen, ensuring smooth and efficient service.
Develop, cost and implement seasonal breakfast, lunch, High Tea and function menus.
Maintain exceptional food quality, presentation and consistency.
Manage food preparation, production schedules and service across café and event operations.
Lead, mentor and train chefs, cooks and kitchen assistants, fostering a positive team culture.
Recruit, roster and performance manage kitchen staff where required.
Manage ordering, supplier relationships, stock rotation, inventory and food cost control.
Monitor labour costs, kitchen budgets and minimise waste while maintaining quality.
Ensure compliance with all Food Safety, HACCP and WHS requirements.
Work collaboratively with front-of-house management to deliver exceptional customer experiences.

About You

You will be an organised and inspiring kitchen leader who enjoys developing people as much as creating great food.

Ideally you will have:

Certificate IV in Commercial Cookery, Diploma of Hospitality Management or equivalent qualifications.
Extensive experience as a Head Chef or Senior Sous Chef in a high-volume café or restaurant.
Strong leadership and people management skills.
Experience creating and costing seasonal menus.
Excellent understanding of food safety legislation and kitchen systems.
Strong ordering, stock control and budgeting experience.
Experience catering for functions, weddings or events is highly regarded.
Passion for fresh, seasonal and locally sourced produce.
Ability to thrive under pressure while maintaining high standards.

Salary of $79,500–$81,000 plus superannuation, depending on experience.
