The Role: Elevate the Experience
We are seeking an experienced, high-performing Team Leader to oversee operations at Melaleuka Farm Merchants Butchery and Food Production (MFM).
Reporting directly to the Group Executive Chef, you will lead a dual-function team across culinary production and butchery operations. You will oversee carcass and primal cut preparation, manage stock yields, drive menu innovation, and ensure our food quality, kitchen standards, and financial metrics hit the mark every time.
Operational Leadership: Lead, mentor, and schedule daily workloads for a multidisciplinary team (including our team of Butcher Managers, Supervisors and Apprentices).
Meat Processing & Yield Management: Prepare and process carcasses and primal cuts into premium retail and kitchen portions, maximising yield and minimising waste.
Financial & Inventory Control: Oversee purchasing, stocktakes, supplier relations, and labor-efficient rostering to manage food costs and gross profit margins.
Quality & Menu Innovation: Work alongside executive leadership on menu engineering, recipe costings, product presentation, and event/marketing initiatives.
Compliance & Safety: Maintain strict compliance with HACCP programs, Food Safety standards, WHS regulations, and safe knife handling/machinery practices.
Dual Expertise: Proven background as a qualified Chef with substantial hands-on experience in butchery and meat preparation.
Leadership Drive: Strong supervisory skills with a track record of coaching teams, resolving operational challenges under pressure, and driving a positive safety culture.
Commercial Acumen: Solid understanding of recipe costing, yield control, and inventory management systems.
Physical Capability: Ability to handle physical requirements, including working in refrigerated prep environments, heavy lifting, and long periods on your feet.
Certificate III in Meat Processing (desirable)
Commercial Cookery Cert III (desirable)
Food Safety Supervisor Certification
Chemform Training Certificate
