About Us

Madeleine de Proust is a boutique French patisserie in Melbourne, specialising in madeleines and refined pastries.
We are known for our creative approach, precise techniques, and collaborations with luxury brands, events, and creative partners.

The Role

We are looking for an experienced pastry chef to join our small pastry team.
This role is ideal for someone with solid pastry kitchen experience, strong attention to detail, and the ability to work efficiently while maintaining consistency and quality.
Depending on your experience, responsibilities may be tailored to suit your strengths, with opportunities to grow into R&D, seasonal product development, and event production.
You will have the opportunity to assist with unique creative projects, including custom moulded madeleines, 3D-printed design development, luxury brand collaborations, weddings, corporate gifting, and event activations.

Key Responsibilities

Daily production of madeleines, financiers, pastries, fillings, glazes, ganache, and creams.
Mixing, baking, finishing, decorating, and packing products to a high standard.
Chocolate and glaze work, including ganache, enrobage, moulding, tempering, and decoration.
Preparing mise en place and following daily production schedules.
Maintaining consistency in flavour, texture, appearance, and presentation.
Assisting with seasonal collections, custom orders, collaborations, and events.
Supporting R&D and new flavour development where required.
Maintaining hygiene, food safety, cleaning, and workstation organisation.

Requirements

Previous experience in a professional pastry kitchen is required.
Strong understanding of pastry production, baking, creams, ganache, chocolate, and finishing techniques.
Excellent attention to detail and consistency.
Reliable, punctual, organised, and able to work in a small team.
Ability to follow recipes, production lists, and instructions accurately.
Full working rights in Australia.
Chocolate work, piping, glazing, or fine pastry finishing experience is highly regarded.
