Baker – Il Mercato Centrale Melbourne

This is not a production-line bakery.

This is not a back-of-house role where your work goes unnoticed.

The Role

This is a hands-on baking role for someone who genuinely loves the craft.

You'll be responsible for:

Mixing, shaping, proofing, and baking a range of artisan breads and baked products.
Maintaining exceptional quality and consistency across all products.
Managing daily production schedules and ensuring products are delivered fresh and on time.
Upholding food safety, hygiene, and cleanliness standards.
Monitoring stock levels and ordering and inventory control.
Working closely with the marketing, events and operations teams.
Contributing ideas for new products, seasonal offerings, and continuous improvement.

About You

Previous experience as a Baker in a commercial bakery, restaurant, café, hotel, or hospitality venue.
Strong knowledge of bread-making and other bakery item techniques, fermentation, and baking processes
Passionate about quality ingredients and traditional baking methods.
Reliable, organised, and able to thrive in a fast-paced environment.
Available for early morning, weekend, and public holiday shifts as required.
A team player who takes pride in producing outstanding products every day.
