Part Time Commis Chef – Blacksmith Bar & Grill

At voco Melbourne Central, we’re all about being welcoming, unstuffy and thoughtful. Located in the heart of Melbourne CBD and part of IHG Hotels & Resorts, our hotel is home to Blacksmith Bar & Grill, a vibrant restaurant serving quality food, drinks and memorable dining experiences.

We’re looking for a Part Time Commis Chef to join our Culinary team and support our restaurant operations across lunch and dinner service.

What you'll be doing

Working alongside our experienced culinary team, you’ll help deliver consistently great food while keeping the kitchen running smoothly. Blacksmith features a menu with a strong focus on quality produce and fire-grilled meats, including steaks, alongside a range of other dishes.

Your day-to-day responsibilities will include:

Assisting with food preparation and cooking for lunch and dinner service
Preparing mise en place and dishes according to recipes and presentation standards
Assisting with the preparation and cooking of meat, seafood, vegetables and other menu items
Supporting the Chef de Partie and senior chefs during busy service periods
Assisting with grill and other sections of the kitchen as required
Ensuring food is prepared and stored in accordance with food safety and hygiene standards
Maintaining a clean, organised and safe kitchen environment
Assisting with stock rotation, portion control and minimising food wastage
Working collaboratively with the Culinary and Food & Beverage teams
Following IHG and voco brand standards and hotel procedures

What we're looking for

We’re looking for someone who is reliable, hands-on and passionate about hospitality, with a genuine interest in developing their culinary skills.

Ideally, you will have:

Previous experience in a commercial kitchen, restaurant or hotel environment as a Commis Chef
A passion for food and a willingness to learn and develop
An interest in working with quality produce and a varied restaurant menu
Good knowledge of food preparation, hygiene and food safety practices
The ability to work efficiently in a fast-paced kitchen
A positive attitude and strong team spirit
Good communication and organisational skills
Availability to work lunch and dinner shifts, including weekends and public holidays as required
A relevant cookery qualification or Certificate III in Commercial Cookery is desirable
