Petit Crenn, Melbourne is a neighbourhood café and wine bar shaped by the soul of France and the energy of Australia. Classic dishes, prepared à la minute, meet thoughtful wines and cocktails, all guided by seasonality and restraint.

From morning through evening, the space moves with ease, guests order at the bar, settle where they like, and return often. Drinking and eating unfold in a natural rhythm, where everyday moments are elevated through craft and conviviality.

About the Role

Petit Crenn Melbourne is scheduled to open in October 2026 and will be centrally located in the historic InterContinental Melbourne the Rialto. This is the life changing career opportunity to be an integral part of a new opening affiliated to a renowned Michelin star chef.

As the Restaurant Manager, you will be the face of the restaurant, rand work collaboratively with the Head Chef, Bar Manager and other stakeholders to ensure the successful launch and ongoing success of the operation.

Lead front-of-house operations and the hospitality team in a career-enhancing role with a brand that values excellence, authenticity and simplicity.
Deliver personalised, memorable guest experiences aligned with our vision and values.
Build strong relationships with guests, locals, industry professionals and returning clientele to drive loyalty, gather feedback and enhance the dining experience.
Ensure exceptional guest satisfaction by proactively engaging with guests, resolving concerns promptly and placing the guest experience at the centre of decision-making.
Manage reservations, greet guests and assist with order taking.
Oversee restaurant operations, including stocktake, ordering, purchasing, pricing and rostering.
Maintain impeccable presentation, cleanliness and functionality of restaurant facilities in line with health regulations.
Identify and maximise opportunities to upsell products and experiences that meet guest needs.
Ensure service standards, RSA requirements, food safety regulations, workplace health and safety legislation, and company policies are consistently met.
Report, document and investigate incidents and injuries, implementing corrective actions where required.
Assist to develop, and then monitor restaurant budgets, targets and costs, ensuring stock, labour and operational expenses are managed within budget while maintaining adequate staffing levels.
Reconcile card and cash transactions, including float preparation and balancing takings.
Work productively within rostered hours and remain flexible to meet business needs.
Recruit, train, coach and supervise team members who align with company values and role requirements.
Lead, motivate and develop the team through ongoing training, feedback and performance management to uphold service and quality standards.
Ensure team members maintain professional standards of uniform, grooming and personal hygiene.
Foster a safe, inclusive and engaging workplace where team members feel empowered and supported.
Attend training and meetings as required.
Demonstrate strong business acumen to achieve and exceed operational and financial objectives.
Perform other duties as per the job description and as directed by Management

What We Need from You

Salary $80.000-$100,000Y
A minimum of 2-4 years related leadership experience in a similar restaurant management role.
Demonstrate a genuine passion for food and wine. Fine dining /high end dining experience is preferrable;
Diploma in hospitality management, Food & Beverage, or related field.
Victorian Responsible Service of Alcohol (RSA) Certification
Demonstrated ability to interact with customers, employees and third parties that reflects highly on the brand.
Safe Food Handling certification.
WSET certification.
Problem solving, reasoning, motivating, organizational and training abilities.
Excellent verbal and written English skills
Good numerical and analytical skills
