About the Role
The Head Chef at Petit Crenn Melbourne is responsible for overseeing the culinary operations and lead the team in this exciting new signature restaurant, scheduled to open in October 2026 and will be centrally located in the historic InterContinental Melbourne the Rialto.
This career-enhancing role offers the opportunity to lead the delivery of an innovative, high-quality and profitable dining experience. As a key member of the leadership team, you will work collaboratively with the Area General Manager – Restaurants & Bars, Restaurant Manager and other stakeholders to ensure the successful launch and ongoing success of the operation.
A little taste of your day-to-day
Deliver an impeccable dining experiences, through the production of quality, consistent food preparation, taste & presentation in line with the brand standards.
Create and update menus that reflect seasonal ingredients, current trends, and customer preferences;
Be hands on in all aspects of daily kitchen operations, including food prep, cooking in service and plating;
Ensure optimum ordering of food stock & accurate stocktakes;
Work closely with the front-of-house teams to ensure seamless service;
Conduct menu tastings and train service teams to confidently present menu offerings to guests.
Create special event menus (if required) that enhance the dining experience;
Interact with guests to gather feedback and enhance their dining experience;
Monitor food costs and implement measures to control expenses;
Hiring of a team who align with the brand’s vision and values and as well as possess relevant capabilities to meet job requirements;
Effective systems of quality control, wastage, portion control & food safety;
Responsible for cost effective rostering and approving timesheets for the restaurant’s Kitchen team;
Collaborate and prepare the restaurant’s annual budget and assist with forecasts, future plans, and reports for management
Provide ongoing training, coaching and development of the team members to expand and enhance skills;
Ensure compliance with all food safety and hygiene regulations, conduct regular inspections and audits to maintain high standards;
Perform other duties related to the operation as requested by management.
What we need from you
You must hold a valid and unrestricted work visa to work in Australia
Diploma in Commercial Cookery is essential
Minimum 2-3 years in a leadership role within a commercial kitchen within luxury hotels, high-end restaurants / specialty cafes or wine-bars;
Fine dining experience is preferrable;
Experience with systems in kitchen management, rostering and time and attendance;
Proven success leading and motivating a high performing kitchen team
Understanding of food standards and food safety / HACCP audits;
Extensive knowledge of industry food health & safety in Australia;
Ability to work under pressure and in a fast-paced environment;
Strong leadership and management skills;
Ability to understand & deliver on our guests’ expectations.
Excellent written, verbal and interpersonal communication skills;
