Head Chef / Sous Chef – Il Lago

Il Lago is seeking an experienced and passionate Head Chef and Sous Chef to join our team.

We are looking for motivated chefs who are passionate about quality food, consistency and teamwork. Experience in Italian cuisine, pizza and pasta is highly regarded.

We welcome experienced Head Chefs as well as ambitious Sous Chefs looking to develop their leadership career.

Head Chef Responsibilities

Lead and manage the overall day-to-day kitchen operation
Lead, motivate and develop the kitchen team
Maintain consistently high standards of food quality, presentation and portion control
Develop menus, recipes, specials and new dishes
Manage food costs, gross profit, wastage and portion control
Manage ordering, stock levels and supplier relationships
Plan kitchen rosters and manage labour costs
Oversee food preparation and service during busy periods
Ensure compliance with food safety, hygiene and workplace standards
Train, mentor and develop chefs, cooks and apprentices
Work closely with management and front-of-house teams
Take ownership of the performance, organisation and culture of the kitchen

Sous Chef Responsibilities

Support the Head Chef with daily kitchen operations
Supervise the kitchen team during preparation and service
Assist with food preparation, cooking and presentation
Ensure dishes are prepared consistently to Il Lago standards
Lead services when the Head Chef is unavailable
Assist with ordering, stock control and inventory
Monitor food preparation, portion control and wastage
Assist with training and mentoring junior chefs and cooks
Maintain high food safety and hygiene standards
Help maintain an organised, clean and efficient kitchen
Work closely with the Head Chef to develop menu items and specials

About You

Previous experience as a Head Chef, Sous Chef or experienced senior chef
Strong leadership and communication skills
Passion for quality food and consistency
Able to perform well in a busy, fast-paced kitchen
Reliable, organised and professional
Strong understanding of food safety and hygiene
Available to work weekends and a rotating roster
Italian cuisine, pizza and pasta experience is highly regarded
