Position: Sous Chef
Employment: Full-time
Salary: $79,423 per annum + 12% superannuation
Lu Mare is seeking an experienced and passionate Sous Chef to join our team in Wollongong.
This is a full-time opportunity for a skilled culinary professional with strong kitchen experience who can support the Head Chef in the day-to-day operation of the kitchen and contribute to maintaining consistently high standards of food quality and presentation.
Key Responsibilities
- Assisting the Head Chef with the day-to-day management and operation of the kitchen;
- preparing, cooking and presenting high-quality dishes in accordance with established recipes and standards;
- assisting with menu planning and the development of new dishes;
- supervising and coordinating kitchen staff during food preparation and service;
- ensuring consistency in food quality, portioning and presentation;
- monitoring food preparation and cooking techniques;
- training and mentoring junior kitchen staff;
- assisting with ordering, stock control and inventory management;
- monitoring food costs and minimising wastage;
- ensuring ingredients and food products are stored correctly;
- maintaining high standards of kitchen cleanliness, hygiene and food safety;
- ensuring compliance with relevant food safety and workplace health and safety requirements;
- assisting with kitchen rosters and allocation of duties; and
- assuming responsibility for kitchen operations in the Head Chef's absence.
Skills and Experience
The successful candidate must have:
- A minimum of 3 years of relevant professional experience as a Chef/Sous Chef or in a comparable commercial kitchen role;
- strong knowledge of food preparation and cooking techniques;
- demonstrated ability to work effectively in a busy commercial kitchen;
- experience supervising and coordinating kitchen staff;
- excellent organisational and time-management skills;
- a strong understanding of food safety and hygiene requirements;
- the ability to maintain consistently high standards during busy service periods; and
- a genuine passion for quality food and hospitality.
Salary and Employment Conditions
This is a full-time position based at Lu Mare, 3/9 Wilson Street, Wollongong NSW 2500.
Annual salary: $79,423 + 12% superannuation.
