Venue Manager / Lead Operator (Hands-On)

Baloney’s Deli is a growing New York & Italian-inspired sandwich shop in Byron Bay serving high-quality sandwiches, coffee, and fast, consistent service.

We are now looking for a hands-on Venue Manager / Lead Operator to take full ownership of day-to-day operations and help us build the next stage of the business — including improving systems, strengthening team performance, and preparing and managing extended trading hours and future growth.

This is a working leadership role in a 2-person-per-shift operation, where you will be actively on the tools while also running the venue.

The Role

You will be one of two people on shift each day, working alongside your team in service while also owning how the venue performs.

You will be responsible for:

Running daily operations and leading service in a hands-on capacity
Making coffee, assembling food, and supporting fast-paced service when needed
Ensuring consistency, speed, and quality across every shift
Managing rostering and ensuring reliable staffing coverage
Training, coaching, and lifting performance of casual staff
Overseeing stock control, ordering, and basic cost discipline
Maintaining high standards of cleanliness, organisation, and workflow
Identifying and fixing operational issues in real time
Working directly with the owner to improve systems and structure
Helping prepare the business for extended trading hours (including potential evening trade)
Contributing to hiring and building a reliable, high-performing team

What Success Looks Like

Every shift runs smoothly with minimal owner involvement
Staff are consistent, trained, and accountable
Service speed and product quality remain high during peak periods
Rostering is stable and labour is well controlled
Stock and ordering systems are organised and predictable
The business is ready to expand trading hours confidently
Revenue growth is supported by better execution, not just more effort

Who You Are

Experienced café or hospitality operator (supervisor or manager level)
Confident working a full shift in a hands-on environment
Calm, organised, and able to lead under pressure
Strong understanding of café flow, coffee, and sandwich/service operations
Naturally takes ownership and improves how things run (not just follows instructions)
Comfortable holding standards and giving clear direction to staff
Interested in building something, not just working shifts

$75,000–$95,000 salary (depending on experience)

Important Note

This is not a passive management role.
