Picoso Mexican Cucina is a brand-new waterfront restaurant preparing to open soon at the iconic Hillarys Boat Harbour. Inspired by vibrant Mexican flavours, premium hospitality, and unforgettable guest experiences, Picoso will bring a fresh and exciting dining destination to one of Western Australia’s most popular waterfront precincts.
We are seeking an experienced and passionate Restaurant Manager to join us ahead of opening and play a key leadership role in launching and establishing the venue. This is a unique opportunity to be involved from the beginning, helping build the culture, team, and service standards that will define the success of the restaurant.
About the Role
As Restaurant Manager, you will take ownership of the front-of-house operation and be responsible for delivering exceptional customer experiences, developing a high-performing team, and ensuring smooth day-to-day operations.
You will work closely with the owners and kitchen leadership team to help launch the venue successfully and drive its long-term growth.
Key Responsibilities
- Lead and manage all front-of-house operations
- Recruit, train, mentor, and develop team members
- Deliver exceptional guest experiences and maintain premium service standards
- Manage rosters, labour costs, and team performance
- Oversee reservations, functions, and special events
- Ensure seamless communication between front and back of house
- Handle customer feedback and resolve issues professionally
- Maintain compliance with food safety, liquor licensing, and workplace health and safety requirements
- Monitor venue performance and contribute to sales and profitability growth
- Help establish a positive, energetic, and professional team culture from day one
What We’re Looking For
- Proven experience as a Restaurant Manager or experienced Assistant Manager ready to step up
- Strong leadership and team development skills
- Passion for hospitality and creating memorable guest experiences
- Experience managing high-volume restaurant operations
- Strong understanding of labour costs, budgets, and venue performance
- Excellent communication and organisational skills
- Ability to remain calm and professional under pressure
- Current RSA Certificate (essential)
- Approved Manager Licence (preferred)
