Chef de Partie (CDP)

Location: The Watering Hole Tavern, Monbulk VIC
Salary: $65,000 – $70,000 + super (depending on experience)
Employment Type: Full-time
Reports To: Head Chef / Venue Manager

The Watering Hole Tavern is a vibrant local pub in the heart of Monbulk, known for its welcoming atmosphere, quality food and strong connection to the local community.

We’re focused on serving great pub food, maintaining high standards and creating an environment where both our guests and our team enjoy being part of the Tavern.

About the Role

We’re looking for an experienced and motivated Chef de Partie to join our kitchen team.

This is a hands-on role suited to a chef who is confident running their section, works well under pressure and takes pride in producing consistent, quality food.

You’ll work closely with the Head Chef and wider kitchen team to ensure smooth service while contributing to the ongoing development of the food offering at The Watering Hole Tavern.

For an experienced CDP looking to take the next step in their career, there will also be opportunities to take on additional responsibility and develop their leadership skills.

Key Responsibilities

Prepare, cook and present dishes to a consistently high standard
Take responsibility for your allocated section during preparation and service
Complete daily mise en place and ensure your section is ready for service
Maintain consistency in portioning, presentation and quality
Assist with stock rotation, ordering and inventory control
Minimise food waste and assist the kitchen in achieving food cost targets
Follow recipes, portion controls and kitchen procedures
Maintain high standards of cleanliness, organisation and food safety
Ensure all food is stored, labelled and handled correctly
Assist with receiving and checking supplier deliveries
Work effectively as part of the kitchen team during busy services
Assist and support junior chefs and kitchen staff where required
Communicate effectively with the Head Chef, Venue Manager and front-of-house team
Contribute ideas towards specials, menu development and seasonal dishes
Assist with opening and closing kitchen procedures
Follow all workplace health, safety and food hygiene requirements

Skills & Experience

Previous experience as a Chef de Partie or experienced Commis Chef in a busy kitchen
Experience in a pub, restaurant or similar hospitality environment
Relevant commercial cookery qualifications
Strong cooking and food preparation skills
Good knowledge of food safety and kitchen hygiene
Ability to confidently manage a section during busy service
Strong organisation and time-management skills
Positive attitude and ability to work as part of a team
Understanding of portion control, food costs and waste management
Ability to remain calm and organised under pressure
Flexibility to work evenings, weekends and public holidays as required
