Key Responsibilities:

Maintain impeccable hygiene and food safety standards across all kitchen operations
Prepare and present high-quality sushi, sashimi, and hot dishes with consistency and attention to detail
Uphold and actively promote portion control, quality control, and waste minimisation practices
Support the delivery of exceptional food experiences for daily service, peak periods, and special events
Collaborate across multiple kitchen outlets to ensure seamless and efficient operations
Monitor food quality, storage, and stock levels in line with established procedures
Ensure all dishes are prepared in accordance with standard recipes and presentation guidelines
Assist in training, mentoring, and developing junior kitchen team members
Maintain a clean, organised, and safe working environment in line with WHS standards
Contribute to a positive, professional, and high-performing kitchen culture

What You’ll Bring:

2–5 years’ experience in a high-quality, fast-paced kitchen environment
Demonstrated expertise in Japanese cuisine, with a strong focus on sushi and sashimi preparation
A genuine passion for precision, consistency, and presentation
Solid understanding of food cost control, production efficiency, and waste reduction
Strong organisational skills with the ability to perform under pressure
Excellent communication skills and the ability to work collaboratively within a team
A proactive attitude with a strong work ethic and attention to detail
Confidence in supporting and guiding junior team members
Certificate III or IV in Commercial Cookery (essential)
