The Role

Are you a strong Commis Pastry Chef ready to take the next step, or a junior Pastry Chef de Partie looking for greater responsibility, creative freedom and career progression?

We are seeking a capable and ambitious pastry professional to take ownership of the pastry function within our five-star luxury hotel. This is an ideal step-up opportunity for someone with solid pastry experience who is ready to work more independently, develop their creative voice and advance their career.

Reporting directly to the Executive Chef, you will independently manage the day-to-day pastry operation, producing high-quality items across the hotel’s restaurants, in-room dining, banquets, afternoon teas and special events. Your creative input will be valued as you help shape seasonal menus and maintain consistent five-star standards.

General Responsibilities

Take ownership of the hotel’s day-to-day pastry preparation and production
Prepare and present pastries, desserts, cakes, breads and other baked goods to five-star standards
Work with the Executive Chef to develop new pastry items, seasonal menus and creative concepts
Contribute ideas and professional input to the hotel’s broader culinary offering
Plan and organise pastry production across restaurants, in-room dining, banquets, afternoon teas and special events
Ensure consistent quality, portioning and presentation across all culinary outlets
Maintain appropriate stock levels and assist with ordering, rotation and inventory control
Minimise food waste through effective planning, preparation, storage and portion control
Maintain exceptional standards of food safety, hygiene and kitchen cleanliness
Ensure compliance with HACCP requirements and established hotel procedures
Support and guide junior kitchen team members when required
Collaborate with the Executive Chef and broader culinary team to deliver exceptional guest experiences

You’ll Bring

Experience as a strong Commis Pastry Chef ready to step up, or as a junior Pastry Chef de Partie seeking further career progression
A completed Certificate IV in Patisserie or an equivalent recognised qualification
Strong technical pastry skills and meticulous attention to detail
The confidence and maturity to work independently and take ownership of the pastry function
A self-driven, organised and proactive approach
Creativity and enthusiasm for contributing to menu and product development
Experience within a luxury hotel, fine-dining restaurant or high-volume pastry kitchen will be viewed favourably
Sound knowledge of HACCP, food safety and kitchen hygiene requirements
An understanding of contemporary pastry techniques and current food trends
Excellent organisation and time-management skills
The ability to remain calm and deliver consistent results under pressure
Flexibility to work across a rotating roster, including early mornings, evenings, weekends and public holidays

Pay and Conditions

This is a full-time salaried position, with remuneration commensurate with qualifications and experience.
