Job Title: Chef (Full-Time)

Employer: Hosco Pty Ltd as Trustee for Master Danio’s Foods Trust (t/a Master Dan's) Location: Carina Heights, QLD 4152

Salary Range: $75,000 - $85,000 per annum + Superannuation

About the Business: Hosco Pty Ltd as Trustee for Master Danio’s Foods Trust (t/a Master Dan's) is a fully licensed, fast-paced Vietnamese restaurant located in Carina Heights. You will be part of a multidisciplinary and well-supported team delivering authentic, high-quality Vietnamese cuisine.

Responsibilities:

· Menu Planning and Development: Designing menus that reflect the restaurant’s concept, estimating food and labour costs, creating new dishes, updating existing ones, and ordering food supplies.

· Food Preparation and Cooking: Preparing and cooking complex, high-quality Vietnamese dishes, ensuring every dish meets the establishment's standards for quality, presentation, and taste.

· Supervision and Leadership: Leading the kitchen team, delegating tasks to junior cooks and kitchen assistants, training new staff, and demonstrating techniques and cooking procedures.

· Inventory and Cost Control: Monitoring ingredient levels, tracking usage, minimising waste, and ensuring supplies are fresh and appropriately stored.

· Food Safety and Sanitation: Explaining and strictly enforcing food safety regulations, health standards, and kitchen hygiene to prevent cross-contamination.

· Quality Control: Monitoring the quality of dishes at all stages of preparation and presentation before they reach the customer.

Requirements & Skills:

· Qualifications: Certificate IV in Commercial Cookery, Certificate IV in Kitchen Management, or equivalent international qualification.

· Experience: Proven experience as a Chef for at least 2 years.

· Skills (Core Requirement): Must specialise in authentic Vietnamese cuisine. Essential skills also include knife proficiency, commercial kitchen management, leadership, communication, and the ability to work efficiently under pressure.

· Personal Qualities: Candidates must demonstrate a passion for food, attention to detail, adaptability, and resilience.

· Physical Demands: The job often requires standing for long hours, lifting heavy pots and pans, and working efficiently in a hot, fast-paced environment.
