We are seeking a highly motivated and experienced Food & Beverage Operations Manager to lead our Food & Beverage team with a strong focus on Banquets & Events, while overseeing the day to day operations across Terrace Gardens Restaurant, Cascades Cocktail Lounge, In-Room Dining and Banquets.

This is an exciting opportunity for an experienced hospitality leader who thrives in a fast paced environment and is passionate about delivering exceptional conferences, weddings, gala dinners and events, while maintaining outstanding restaurant and bar operations. The successful candidate will be a hands-on leader with exceptional organisational skills, commercial acumen and the ability to inspire high-performing teams.

About the role

Reporting to the Director of Culinary and Deputy General Manager, you will be responsible for the overall operational leadership of the Food & Beverage department, with a primary focus on the successful delivery of our Banquets & Events operation.

This role oversees the planning and execution of conferences, meetings, weddings, gala dinners, cocktail receptions and special events, ensuring every function is delivered to the highest operational and service standards. Working closely with the Sales & Events team, Director of Culinary and hotel leadership, you will ensure each event exceeds guest expectations while achieving departmental revenue and profitability targets.

In addition to leading the Banquets operation, you will oversee the daily performance of our restaurants, bar and in-room dining, ensuring consistency in service delivery, operational efficiency and guest satisfaction across all outlets.

You will be responsible for developing and leading a large operational team, driving service excellence, controlling labour and operational costs, and identifying opportunities to continually improve the guest experience.

Key Responsibilities

Lead all Banquets & Events operations, ensuring seamless delivery of conferences, weddings, gala dinners, exhibitions, meetings and special events.
Work collaboratively with the Sales & Events team to ensure accurate event planning and flawless execution.
Manage banquet staffing, rostering, event set-up, service delivery and event breakdown.
Ensure all events are delivered to Stamford brand standards and client expectations.
Oversee the daily operations of Terrace Gardens, Cascades Cocktail Lounge and In-Room Dining.
Lead, coach and develop Food & Beverage leaders and team members.
Drive exceptional guest service and continuously improve operational standards.
Manage recruitment, onboarding, training, succession planning and performance management.
Monitor departmental budgets, labour costs, wage percentages, stock control and profitability.
Identify revenue opportunities across conferences, events, restaurants and bars.
Ensure compliance with Food Safety, WHS, liquor licensing and Stamford policies.
Collaborate with the Director of Culinary to deliver exceptional food experiences and seasonal offerings.
Build a positive, engaged and high-performing team culture.

About you

You are an experienced hospitality professional who enjoys leading from the front and developing successful teams.

You will bring:
Minimum 5 years' experience in a senior Food & Beverage leadership position within a hotel or premium hospitality environment.
Extensive experience leading Banquets & Events operations is essential.
Proven experience managing conferences, weddings, gala dinners and large-scale functions.
Experience overseeing multiple Food & Beverage outlets simultaneously.
Strong commercial and financial acumen with experience managing budgets, forecasting and labour costs.
Exceptional leadership, coaching and people management skills.
Excellent organisational, communication and stakeholder management abilities.
Ability to work effectively in a high-volume, fast-paced environment.
Strong attention to detail with a passion for delivering memorable guest experiences.
Current Responsible Service of Alcohol (RSA).
