Situated within one of Adelaide’s premier beachside precincts, this lively hospitality venue is renowned for its vibrant atmosphere, contemporary Mexican cuisine and exceptional customer service. The restaurant offers an extensive menu featuring authentic and modern Mexican dishes, grilled meats, seafood specialties, tacos, burritos, share plates and a variety of vegan, vegetarian and gluten-free options. Salary - $75,000 - $90,000 plus superannuation per annum

THE ROLE:
The successful applicant will be responsible for preparing and cooking Mexican cuisine and specialty menu items, managing kitchen preparation, maintaining food quality standards and supporting efficient kitchen operations during busy service periods.
KEY RESPONSIBILITIES INCLUDE:
· Plan, organise and coordinate daily kitchen operations, including food preparation activities for lunch, dinner and peak service periods to ensure timely and efficient meal delivery.
· Prepare and cook a wide range of dishes including Mexican cuisine, grilled meats, seafood specialties, tacos, burritos, share plates and seasonal menu items in accordance with established recipes and venue standards.
· Prepare and cook various proteins including beef, pork and seafood while maintaining consistency in flavour, quality, texture and presentation.
· Develop and modify recipes and assist with menu planning, seasonal menu updates and introduction of new dishes considering customer preferences, ingredient availability and food cost requirements.
· Estimate food requirements, plan ingredient preparation and assist with ordering supplies to maintain appropriate stock levels and kitchen efficiency.
· Manage food storage, stock rotation and inventory control procedures while ensuring compliance with food safety requirements.
· Monitor food quality throughout preparation, cooking and presentation stages to ensure all meals meet required standards for taste, appearance, portion size and consistency.
· Maintain effective portion control, monitor food costs and implement strategies to minimise food wastage and improve kitchen efficiency.
· Prepare meals suitable for dietary requirements including vegetarian, vegan and gluten-free options while ensuring food safety and quality standards are maintained.
· Lead, supervise and support kitchen staff by providing guidance on food preparation techniques, cooking methods, presentation standards and safe work practices.
· Train junior kitchen staff in kitchen procedures, hygiene requirements, food handling practices and workplace standards.
· Coordinate kitchen activities during busy service periods and maintain effective communication with kitchen and front-of-house teams to support smooth service delivery.
· Assist with catering requirements, private functions and special events while maintaining consistent food quality, presentation and service standards.
· Ensure compliance with Occupational Health and Safety (OH&S), workplace procedures and food safety regulations, maintaining a clean, safe and hygienic kitchen environment.
This role strong organisational skills, creativity and the ability to thrive in a fast-paced hospitality environment while maintaining a passion for authentic and contemporary Mexican cuisine.
WHAT WE ARE LOOKING FOR:
- Relevant qualification, such as a Diploma of Hospitality Management - Commercial Cookery (or agreed equivalent).
- Minimum of 3 years (preferably more) experience as a Chef within a commercial kitchen, restaurant or hospitality environment, ideally in Mexican cuisine.
- Experience in grill cooking, including the preparation and cooking of grilled meats, seafood and specialty dishes.
- Demonstrated experience in menu planning, recipe development, food costing and menu improvement.
- Strong knowledge and experience in modern Mexican cuisine.
- Understanding of costing, portioning and kitchen management.
- Knowledge of Australian food safety standards, hygiene practices and safe food handling procedures.
- Ability to supervise, train and support kitchen team members.
- Excellent time management, communication skills and attention to detail.
- Available to work weekends, evenings and peak trading periods.
- You must have unrestricted working rights to work full time in Australia to be eligible for consideration.
