Established in 2018, the venue combines authentic Mexican street food with a lively industrial-style atmosphere inspired by the colourful cantinas of Mexico City. Known for its tacos, burritos, nachos, handcrafted margaritas, tequila selection, and rooftop dining experience, Benzina Cantina has become a popular destination for casual dining, private functions, and nightlife in Preston. The venue also features “Bar Blown Crazy,” a late-night cocktail and event space that adds to its energetic and social dining experience.

About the role

We are seeking an experienced and passionate Chef to join our busy Mexican restaurant team. The successful candidate will be responsible for preparing and presenting high-quality Mexican cuisine, including tacos, burritos, grilled dishes, sauces, and traditional specialties while maintaining consistency, flavour, and presentation standards. The role involves planning menus, managing food preparation, monitoring stock levels, ensuring compliance with food safety and hygiene regulations, and supervising kitchen operations during busy service periods. The ideal candidate should have strong knowledge of commercial kitchen operations, experience in Mexican cuisine, excellent teamwork skills, and the ability to work efficiently in a fast-paced hospitality environment.

Salary Range: $75,000 to $80,000 plus guaranteed superannuation

Duties and responsibilities

Planning and preparing authentic Mexican dishes including tacos, burritos, quesadillas, enchiladas, grilled meats, salsas, sauces, and specialty menu items in accordance with restaurant standards.
Designing menus and contributing to the development of seasonal and promotional Mexican food offerings.
Monitoring food preparation and cooking processes to ensure consistency in taste, presentation, portion control, and quality.
Preparing, seasoning, and cooking meat, seafood, poultry, vegetables, sauces, and Mexican-style accompaniments using appropriate cooking techniques.
Supervising kitchen operations during service periods to ensure efficient workflow and timely meal preparation.
Inspecting food supplies, ingredients, and finished dishes to ensure freshness, quality, and compliance with food safety standards.
Managing inventory levels, ordering kitchen supplies, and coordinating with suppliers to maintain adequate stock.
Training, supervising, and guiding kitchen staff including cooks and kitchen hands on food preparation procedures and hygiene practices.
Ensuring compliance with workplace health and safety regulations, food handling standards, and sanitation requirements.
Monitoring kitchen cleanliness, maintenance of cooking equipment, and safe storage of food products.
Controlling food costs, minimising wastage, and assisting in budgeting and kitchen cost management.
Collaborating with restaurant management to improve menu offerings, customer satisfaction, and overall dining experience.

Qualifications and skills

· Diploma in Hospitality Management and at least 3 years of experience.

· Emphasis on local and seasonal produce.

· A strong leadership style suitable for a boutique or conceptual kitchen.

· Operational accountability paired with creative culinary direction.
