Our venues include, The Glenmore Hotel and Billy Barry's Hotel both in Sydney, as well as Moonee Beach Hotel, Toormina Hotel and Sawtell Hotel in Coffs Harbour.

We are seeking a qualified and experienced Chef to join our busy pub/bistro kitchen on a full-time basis. This is an excellent opportunity for a motivated hospitality professional to work in a high-volume venue delivering quality modern pub classics and seasonal specials.

About the Role

Reporting to the Head Chef/Management, the successful applicant will be responsible for overseeing food preparation and supporting the efficient day-to-day operation of the kitchen.

Key responsibilities include:

Planning and contributing to seasonal menus in consultation with management.
Estimating food and labour costs and assisting with stock control and ordering.
Preparing, cooking and presenting high-quality pub and bistro-style meals across lunch and dinner service.
Ensuring consistency in flavour, portion control and presentation.
Monitoring kitchen operations during service to maintain efficiency and standards.
Supervising, training and mentoring apprentices and junior kitchen staff.
Maintaining compliance with food safety regulations and workplace health and safety standards.
Managing food storage, stock rotation and minimising waste.
Assisting with menu development, daily specials and function catering where required.

About You

To be considered for this position, you must demonstrate:

A relevant qualification in Commercial Cookery.
A minimum of two years’ experience in a similar role within a fast-paced kitchen environment.
Proven ability to lead and support junior staff.
Strong organisational skills and the ability to perform under pressure.
A commitment to quality food, consistency and professional kitchen standards.
Solid understanding of food safety, hygiene and WHS requirements.
Availability to work a rotating roster including evenings and weekends.
Full Australian working rights.

This is a full-time position offering 38 hours per week with an annual salary from $79,500 - $82,500 per year, depending on experience.
