Harbourfront Hotel sits right on the waterfront, and the food matches the view. We’re talking fresh seafood served at its best, premium steaks, and daily specials that give you a reason to keep coming back. We have great food, Cold drinks and Townsville’s best water views.

Harbourfront Hotel has vacancy openings for Pastry Cooks. We are looking for a qualified and experienced candidates to join our team. The suitable person must be qualified and must have experience serving a full range of pastry and bakery items.

Major Duties and Responsibilities:

· Prepare and present a wide variety of pastries, desserts, cakes, slices, and sweet & savoury menu specials

· Creating recipes for cakes, pastries, chocolates, and plated desserts that are both delicious and visually appealing for events and high teas

· Prepare doughs, batters, fillings, glazes, and sauces in-house

· Decorate pastries using different icings, toppings, Fillings etc. to ensure the presentation requirement according to service or client preferences

· Sourcing and selecting top-quality ingredients to improve flavors, textures, and overall dessert quality.

· Perform daily cleaning, rotation, stocktaking, and equipment checks

· Manage your own pastry prep area efficiently and hygienically

· Work with Head Chef on custom orders and menu changes

· Upholding strict food safety and hygiene regulations to maintain a clean and compliant kitchen environment, Adhere to HACCP, food safety, and allergy management practices

· A willingness to coach and support other team members in learning your craft.

Qualifications:

· Certificate III in Patisserie or Commercial Cookery (or 3+ years equivalent experience)

Main Skills and Experience:

· Minimum 3 years’ experience in a similar pastry or dessert-focused kitchen role with high volume & fast pace

· Understanding of dessert trends, seasonal baking, and customer expectations

· Ability to multi-task across à la carte, event, and takeaway prep

· Passion for scratch baking, with a flair for classic and modern techniques

· Good pallet knife, decorating and cake writing skills.

· Excellent technical knowledge of pastry cooking techniques.

· Commitment to producing consistently high-quality baked goods

· Eye for presentation, attention to detail and portion control

· Excellent hygiene, time management, and prep organization

· Strong time management and organizational skills to meet production deadlines

· Team-first attitude and great communication skills

· Ability to work under pressure during peak weekends and events

· Good Understanding of Food Safety Practices

· Strong work ethic.

Pay: $79,499.00 – $85,000.00 per year
