We're Hiring – Group Bar Manager & Mixologist
Desert Ship is looking for an experienced and passionate Group Bar Manager & Mixologist to lead the bar operations and beverage program across our growing hospitality group.
This is an exciting opportunity to oversee the cocktail and beverage offering at Shaffa and Caness, while playing a key role in developing and launching the beverage program for our third venue, opening within the next six months.
About the Role
As the Group Bar Manager & Mixologist, you will be responsible for leading all aspects of our bar operations, driving innovation through exceptional cocktail development, and ensuring outstanding guest experiences across all venues.
This role combines creativity, leadership, operational excellence, and strategic thinking, making it ideal for someone who is equally comfortable behind the bar, training teams, and managing business performance.
Key Responsibilities
- Lead the bar operations and mixology program across Shaffa and Caness.
- Develop and launch the beverage program for our upcoming third venue.
- Create and maintain innovative cocktail menus that align with each venue's identity and concept.
- Ensure consistency in recipes, presentation, quality, and service standards across all venues.
- Recruit, train, mentor, and develop bar teams.
- Manage beverage costing, stock control, ordering, inventory, and supplier relationships.
- Monitor bar performance, labour costs, and profitability, identifying opportunities to improve efficiency and increase revenue.
- Collaborate with senior management on beverage strategy, menu engineering, and future venue openings.
- Stay up to date with industry trends and introduce new products, techniques, and seasonal offerings.
- Ensure compliance with RSA regulations, food safety standards, and company procedures.
- Foster a culture of excellence, accountability, teamwork, and continuous improvement.
Experience & Requirements
- Minimum 2 years of experience in a Bar Manager, Group Bar Manager, or Mixologist leadership role.
- Strong knowledge of classic and contemporary cocktails, spirits, wines, and beers.
- Proven experience leading and developing high-performing bar teams.
- Strong understanding of beverage costing, stock management, and financial performance.
- Passion for mixology, creativity, and hospitality.
- Excellent leadership, communication, and organisational skills.
- Ability to thrive in a fast-paced, high-volume environment.
- High attention to detail and commitment to delivering exceptional guest experiences.
- Current RSA certification.
- Full Australian working rights.
