We’re looking for an experienced and motivated Full Time Sous Chef to join the team at The Grand Hotel in Frankston. If you’re all about good food, good people and a bit of controlled chaos — we’d like to hear from you.
Join a busy and dynamic kitchen where no two days are the same. As Sous Chef, you'll work closely with the Head Chef to lead daily operations, deliver consistently high-quality food, maintain safety and compliance standards, and create great experiences for our guests. Working alongside an experienced and supportive team, you'll play a key role in a fast-paced environment where teamwork and a passion for great food are at the heart of what we do.
The Grand Hotel is located in Frankston, the gateway to the Mornington Peninsula.

Pegasus Leisure Group (PLG) is the hospitality arm of the Melbourne Racing Club, managing a growing network of 16 pubs, clubs and hospitality venues across Victoria. What You’ll Be Doing

Working alongside the Head Chef to keep the kitchen running smoothly and service on point.

Preparing and plating quality dishes that look great and keep guests coming back for more.

Lead and motivate the kitchen team helping to create a positive, supportive kitchen culture.

Keeping food safety, cleanliness and kitchen standards at the highest level.

Helping manage stock, ordering and supplier relationships to keep the kitchen well stocked and minimise waste.

Monitor food and labour costs and contribute to achieving budget and profitability targets.

Supporting the recruitment, training and development of team members so everyone can do their best work.
What we are looking for:

Confidence across a variety of cooking techniques, with a genuine passion for producing great food.

A strong understanding of food safety, hygiene and kitchen compliance requirements.

The ability to lead, motivate and support a team while keeping service running smoothly.

Great organisation skills and attention to detail.

Strong communication skills and the ability to build positive working relationships.

The ability to stay calm under pressure and keep service running smoothly.
Essential Requirements

At least 3 years' experience in a professional kitchen, with experience leading or supporting a busy service.

Certificate III in Commercial Cookery (or an equivalent qualification).

Current Food Safely and Food Allergens Certificate, or willing to obtain.

A Role That Keeps You Moving
