Full Job Description

We have a great opportunity for a Senior Head Chef to lead our new Functions & Events precinct alongside our current bistro kitchen team. Located in the Trade Coast Hotel. This is a position for an experienced Head Chef who is passionate about providing great quality food and leadership in a high volume venue.

Key Responsibilities;

Strong leadership skills, hire your new banquet team to drive best standards
Lead food production across corporate events, weddings, special events - consistently on-brand, consisently excellent
Partner with Sales & Events and Function Operations for seamless execution from brief to service.
Manage food costs, budgets and stock control for both hotel & functions
Own kitchen readiness against run sheets and event briefs - timing, plating, presentation & guest experience
Maintain food safety, hygiene and OH&S standards across all prep and service
Ability to achieve budgeted payroll and rostering efficiency.

What you will bring:

Proven leadership in a banquets or events kitchen - weddings and events experience a strong plus
A creative eye that treats every event as a chance to impress
Calm, decisive leadership when timelines are tight and stakes are high
Sharp budget instincts without compromising the guest experience
A collaborative style - you will be tight with the kitchen team, C&E and Function Ops
