Full Job Description

The SPHINX HOTEL is a hospitality business based in Geelong, Victoria, offering pub dining, restaurant service, and motel accommodation. We are focused on providing quality food, good service, and a welcoming experience for both local patrons and guests. As our business continues to grow, we are looking for a skilled and reliable full-time Chef to join our kitchen team.

Key Responsibilities:

· Prepare and cook a wide range of dishes in line with the menu and kitchen standards

· Maintain consistency in food quality, presentation, and portion control across service periods

· Plan daily specials, develop menu items and seasonal changes, and ensure dishes align with business standards and customer expectations

· Monitor the quality and freshness of ingredients and ensure food is stored, handled, and used correctly

· Estimate food and labour requirements, control kitchen costs, order supplies, and manage stock levels and rotation to minimise wastage

· Supervise and train junior kitchen staff, and demonstrate cooking techniques to maintain consistency and kitchen standards

· Monitor the quality of dishes at all stages of preparation, cooking, and presentation.

· Coordinate kitchen operations during busy service periods to ensure timely preparation and service of meals

· Ensure hygiene, food safety, and kitchen procedures are implemented and followed by kitchen staff.

· Minimise wastage and support efficient use of stock and kitchen resources

· Work closely with the kitchen team in the day-to-day running of operations

Skills and Experience:

· Certificate IV in Commercial Cookery is preferred

· Diploma of Hospitality Management will be highly regarded

· Minimum of 1 year of relevant experience in a commercial kitchen

· Previous experience in a pub, restaurant, hotel, motel, or similar hospitality setting will be highly regarded

· Ability to prepare and cook a variety of dishes in a fast-paced kitchen

· Strong understanding of food preparation, kitchen operations, and safe food handling practices

· Ability to work efficiently under pressure while maintaining food quality and consistency

· Good organisational and time-management skills

· Reliable, hardworking, and able to work well in a team
