Full Job Description

We are looking for an experienced Sushi Chef to join our team at Blue Lemon Terrigal. This is a full-time position with an annual salary range of $78,000 - 82,000.

Key Responsibilities:

Prepare and present high-quality sushi dishes, including nigiri, sashimi, rolls, and specialty items.
Handle all aspects of sushi preparation: cutting fish, cooking rice, seasoning, plating, and garnishing.
Assist with hot food preparation such as tempura, teriyaki, grilled dishes, and other Japanese-inspired menu items.
Ensure food safety, hygiene, and quality standards are consistently met.
Monitor stock levels, manage kitchen supplies, and support smooth daily operations.
Work closely with the kitchen team to maintain efficiency and consistency.
Requirements:
Proven experience as a sushi chef or in a similar role.
Strong knife skills and deep knowledge of traditional sushi techniques.
Ability to prepare both sushi and Japanese hot dishes.
Excellent attention to detail and commitment to quality.
Strong communication skills and ability to work in a fast-paced environment.
Flexibility to work evenings, weekends, and public holidays as required.
