Full Job Description

We are seeking an experienced and highly motivated Sous Chef to join our dynamic kitchen team. Working directly under the Head Chef, the successful candidate will play a key role in the day-to-day operation of a busy buffet kitchen, ensuring exceptional food quality, consistency, and service standards in a fast-paced, high-pressure environment.

The Sous Chef will assist in leading and supervising the kitchen team, maintaining food safety compliance, managing production schedules, and ensuring smooth service during high-volume meal periods.

Key Responsibilities

Support the Head Chef in the daily management and operation of the buffet kitchen.
Lead, motivate, and supervise kitchen staff to ensure efficient and professional service.
Oversee food preparation, cooking, presentation, and replenishment of buffet offerings.
Maintain high standards of food quality, consistency, and portion control.
Monitor stock levels, assist with ordering, inventory management, and stock rotation.
Ensure strict compliance with food safety, hygiene, and workplace health and safety regulations.
Assist with menu planning, recipe development, and seasonal menu updates.
Train, mentor, and develop junior chefs and kitchen assistants.
Coordinate kitchen operations during peak service periods and manage workflow effectively under pressure.
Minimise food waste and contribute to cost-control initiatives.
Step into the Head Chef's role when required, ensuring continuity of kitchen operations.

Skills and Experience

Proven experience as a Sous Chef or Senior Chef in a high-volume buffet, hotel, resort, club, or large-scale catering environment.
Strong leadership and team management skills.
Ability to work effectively in a fast-paced, high-pressure environment while maintaining attention to detail.
Excellent knowledge of food preparation techniques, kitchen operations, and food safety standards.
Experience managing large-scale food production and service.
Strong organisational, communication, and problem-solving abilities.
Ability to multitask and prioritise workloads during busy service periods.
Relevant culinary qualifications and food safety certifications.
