Full Job Description

About position:

We are looking for a highly skilled Chef de Partie with experience in Dalmatian/Dubrovnik regional cuisine. This is a rare and specialised role requiring expertise in traditional Adriatic cooking methods, homemade breads, stocks, and seafood preparation.

Key Responsibilities: Prepare and cook authentic Dalmatian dishes including seafood risotto, octopus, porchetta, wild boar, and other traditional Adriatic dishes. Bake a variety of homemade breads and traditional baked goods. Prepare traditional stocks, broths, and bases essential to Dalmatian cuisine. Fillet, portion, and cook seafood; butcher cuttlefish and preserve ink sacs. Apply traditional cooking methods such as slow roasting, open-flame grilling, frying, marination, and preservation. Maintain high standards of food quality, hygiene, and consistency. Work effectively in a small, boutique kitchen environment. Essential Skills and Qualifications: Certificate IV in Commercial Cookery (Australia) or equivalent. Minimum 3 years of professional experience in general restaurant kitchens. Minimum 18 months of professional experience in Dalmatian/Dubrovnik cuisine under the supervision of recognised Croatian chefs. Strong recommendation letter(s) from established Croatian chefs verifying training and skills. Skilled in homemade bread baking, preparation of traditional stocks and bases, fish filleting, butchering cuttlefish, and preserving ink sacs. Proven ability to replicate authentic Adriatic cooking methods. Knowledge of Dalmatian culinary traditions and ingredients.
