Lucia is a Mediterranean eatery inspired by traditional European fare of our past. We focus on high-quality food and service, the name is a nod to St Lucia of Syracuse, the patron saint of light who dedicated her life to providing food to those in need.

About the role:

We are seeking an experienced Head Chef to lead our kitchen team and drive the culinary direction of the business. This is a full-time position.

Key Responsibilities:

Key responsibilities include:

Leading, training and mentoring the kitchen team to deliver high-quality dishes consistently
Designing, costing and updating seasonal menus
Managing food quality, presentation and portion control across all services
Overseeing daily kitchen operations, including prep, service and close
Ensuring strict compliance with food safety, hygiene and WHS standards
Managing stock control, ordering and supplier relationships
Controlling food costs and minimising waste while maintaining quality standards
Creating staff rosters and managing labour costs within budget
Collaborating with management on specials, events, and overall customer experience

About You:

To be successful in this role, you will have:

Proven experience as a Head Chef or Senior Sous Chef in a relevant environment
Strong leadership skills with the ability to motivate and develop a team
Excellent cooking skills and deep knowledge of mediterranean cuisine type
Experience in menu planning, costing and GP/food cost control
Solid understanding of food safety regulations and kitchen WHS requirements
Strong organisational and time-management skills, able to perform under pressure
Ability to maintain high standards of quality and consistency during busy services
Good communication skills and a collaborative approach with front-of-house and management
Relevant hospitality Diploma or a Degree or Certificate IV in Commercial Cookery or Kitchen Management
