Full Job Description

Work alongside Grant Smillie and Marmont Exec Chef to shape the next chapter of one of Melbourne's most iconic hospitality venues.

The Prince Hotel is seeking an experienced, ambitious, and passionate Head Chef to lead the culinary operations of our landmark St Kilda venue.

This is a rare opportunity to join a leadership team that includes renowned hospitality entrepreneur Grant Smillie and his Exec Chef, with the chance to influence and develop multiple food concepts across a diverse and evolving operation.

We're looking for a chef who thrives on leadership, enjoys building high-performing teams, and has the experience to successfully manage complex, multi-faceted kitchen operations.

The Opportunity

As Head Chef, you will take ownership of all Back of House operations while working closely with the director and Exec Chef to elevate the food offering across the venue.

Your responsibilities will span:

Functions and weddings
Pub dining
Bar food offerings
Restaurant operations
Future premium and potentially hatted dining concepts

You will have the unique opportunity to recruit, mentor, and develop your own team while helping shape the culinary direction of a venue with a rich history and exciting future.

Key Responsibilities

Menu development and innovation
Food production and quality control
Leadership and management of all BOH operations
Recruitment, training, and development of kitchen staff
Driving team productivity, culture, and morale
Purchasing, supplier relationships, and stock control
Cost management and operational efficiency
Hygiene, food safety, and compliance management

About You

You will bring:

Minimum 3 years' experience as a Head Chef within a medium-to-large hospitality operation
Strong understanding of managing multi-level food operations
Exceptional leadership and communication skills
Broad culinary knowledge and a genuine passion for food
The ability to balance creativity with operational excellence
A hands-on leadership style and strong attention to detail
