Description

Novotel Sydney Parramatta is looking for an experienced and passionate Director of Culinary to join our leadership team on a full-time basis.

Located just minutes from Parramatta CBD, our hotel caters to a diverse mix of business and leisure travellers. As the Director of Culinary, you will oversee the hotel’s culinary and Food & Beverage operations, leading both our kitchen and front-of-house teams to deliver exceptional food, service and guest experiences while driving team engagement, operational excellence and commercial performance.

Reporting to the General Manager, this role is responsible for:

Providing strategic and operational leadership across the hotel’s kitchen and Food & Beverage operations.
Leading, coaching and developing culinary and Food & Beverage teams to achieve high standards of performance and service.
Overseeing the day-to-day operations of the kitchen, restaurant, bar, room service and conferencing.
Driving exceptional food quality, presentation and guest experiences while maintaining brand standards.
Developing menus and culinary offerings that reflect guest expectations, market trends and commercial objectives.
Managing food and beverage costs, labour costs, rosters, stock control and departmental expenses.
Working closely with the leadership team to maximise revenue, profitability and overall departmental performance.
Managing food purchasing, supplier relationships, inventory control and monthly stocktakes.
Ensuring consistent food quality, kitchen efficiency and compliance with food safety standards.
Collaborating with the Food & Beverage team to ensure a seamless connection between kitchen operations and guest service.
Driving innovation and continuous improvement across culinary and Food & Beverage operations.
Ensuring compliance with food safety, RSA, WHS and hotel policies and procedures.

What We’re Looking For:

Proven leadership experience in a senior culinary, Food & Beverage or hotel hospitality role.
Previous experience overseeing both kitchen and Food & Beverage operations will be highly regarded.
A genuine passion for food, hospitality and delivering exceptional guest experiences.
Strong leadership skills with the ability to inspire, coach and develop diverse teams.
Demonstrated experience managing budgets, labour, food costs, stock control and departmental performance.
Strong commercial acumen and the ability to identify opportunities to improve revenue and profitability.
Excellent communication, organisational and problem-solving skills.
A strong understanding of food safety, kitchen operations and hospitality compliance requirements.
A current Food Safety Supervisor certificate and RSA certificate, or the ability to obtain them.
The flexibility to work a rotating roster, including evenings, weekends and public holidays.
