Pastry Chef – Croissant & Viennoiserie Specialist

Location: Brisbane, QLDPosition: Full-TimeSalary: $75,000–$85,000 per year (depending on experience)

We are looking for a passionate and highly skilled Pastry Chef specialising in croissants and laminated doughs to join our growing wholesale bakery.

This role is ideal for someone who takes pride in producing premium-quality viennoiserie and enjoys working in a fast-paced, high-volume environment.

About the Role

You will be responsible for producing a wide range of laminated pastries, including:

Croissants
Pain au Chocolat
Danish pastries
Cinnamon Scrolls
Pain aux Raisins
Seasonal and specialty viennoiserie

You will be involved in the complete production process, including:

Dough mixing
Lamination
Sheeting
Cutting and shaping
Proofing
Baking
Maintaining consistency and high-quality standards

What We’re Looking For

Minimum 3 years’ experience producing croissants and laminated pastries.
Strong knowledge of dough development, fermentation and butter lamination.
Ability to work efficiently in a high-volume production bakery.
High attention to detail and pride in producing exceptional products.
Reliable, organised and able to work independently.
Positive attitude and strong work ethic.
