About Us

I Eat Fresh is an established commercial bakery based in Brendale, Queensland, proudly servicing the Brisbane region for over 15 years.

We specialise in producing premium artisan breads, pastries, cakes, cookies, desserts, laminated dough products and specialty baked goods for both wholesale and retail customers. Operating from a modern HACCP-certified production facility, we are committed to quality craftsmanship, food safety, innovation and continuous improvement.

As our business continues to grow, we are seeking an experienced and passionate Senior Baker to join our production leadership team.

About the Role

Reporting directly to the Production Manager, the Senior Baker will play a key role in overseeing daily bakery operations while maintaining exceptional standards of product quality, food safety and production efficiency.

This is a hands-on leadership position suited to someone with strong commercial bakery experience who enjoys mentoring staff, improving processes and producing premium-quality baked products.

Key Responsibilities

The successful candidate will be responsible for:

Producing artisan breads, rolls, sourdoughs and specialty bakery products.
Preparing and producing laminated dough products including croissants, Danish pastries and puff pastry.
Producing cakes, muffins, slices, cookies, desserts and other baked goods.
Mixing, kneading, fermenting, proving, baking and finishing products to consistent quality standards.
Monitoring ingredient quality and maintaining recipe consistency.
Leading and supervising bakery staff during production.
Training and mentoring apprentice and junior bakers.
Planning daily production schedules to meet customer demand.
Maintaining HACCP, food safety and quality assurance standards.
Monitoring stock levels and assisting with ingredient ordering.
Operating and maintaining commercial bakery equipment safely.
Identifying opportunities to improve production efficiency and minimise waste.
Maintaining a clean, organised and safe production environment.
Assisting with new product development and continuous improvement initiatives.

Skills & Experience

To be successful in this role you will have:

Trade qualification in Baking or equivalent industry experience.
Minimum 5 years' commercial bakery experience.
Previous leadership or supervisory experience within a commercial bakery.
Strong knowledge of artisan bread production and laminated doughs.
Experience producing a broad range of bakery products.
Sound understanding of HACCP and food safety systems.
Ability to work efficiently in a fast-paced production environment.
Excellent organisational and time management skills.
Strong communication and leadership abilities.
A positive attitude with a willingness to mentor and develop team members.
Flexibility to work early morning, weekend and public holiday shifts when required.
