Job Description

Pindara Private Hospital is seeking a Sous Chef on a permanent full-time position to provide operational leadership within its high-volume catering department, ensuring the consistent delivery of nutritious, high-quality meals for patients, staff, and visitors. You will work closely with the Executive Chef to manage kitchen workflows, maintain rigorous food safety standards, and oversee a diverse workforce of kitchen staff in a fast-paced healthcare environment. This role is pivotal in balancing clinical dietary requirements with exceptional culinary execution to enhance the overall patient experience.

In this role, you will:

Proven track record in successfully managing, motivating and developing a large catering team
Food preparation and plate presentation for all patient meals, room service and functions
Assisting with the supervision, motivation to the highest level of service and training and development of the chefs, stewards and catering attendants
Relieving the Head Chef / Catering Manager during days off and holidays
Ensuring there are adequate levels of stock ordered and keeping wastage to a minimum
Assist in all aspects of HACCP and the Food safety program ensuring all yearly mandatory Food safety training is completed on time
Working in a team environment, ensuring timely service and a high standard of presentation.
Ability to work flexible hours including nights and weekends and public holidays

About You

The successful applicant will also have the following:

A Certificate III or IV in Commercial Cookery as well as have a food safety supervisors’ certificate or be willing to obtain one.
Experience in similar role is essential
Production and A la Carte experience
Experience in Menu Development and implementation, nutritional knowledge is an advantage.
Computer and administrational skills essential
Excellent work ethic, customer service skills, time management skills and the ability to successfully work in a team environment
Flexibility to work all shifts across a 7-day rotating roster
Understanding of food safety and hygiene principals
Creative problem solving and good communication skills
Ability to work in a multicultural and diverse workplace
