Full Job Description

Role Overview:
MomoNBitze is seeking a dedicated and skilled Head Chef to lead our kitchen team in Oakleigh. You will be the heart of our operations, responsible for maintaining the authenticity of our Himalayan menu—from our signature steamed, fried, and Kothey momos to our traditional Nepali Khaja sets and hearty Chowmein. You will lead by example, ensuring that every dish served reflects the high standards of quality, consistency, and authentic flavor that our guests crave.

Key Responsibilities:

Culinary Excellence: Oversee all food preparation, with a sharp focus on traditional Himalayan cooking techniques, dough preparation, and authentic spice blending.
Kitchen Operations: Manage daily prep lists, oversee efficient service flow during peak hours, and ensure strict stock rotation.
Quality & Consistency: Conduct final quality checks at the pass to ensure every dish meets our specific recipe standards for taste and presentation.
Team Leadership: Guide and mentor kitchen staff, fostering a collaborative and professional work environment.
Inventory & Waste Management: Monitor food inventory, minimize waste, and maintain organized storage areas.
Compliance & Hygiene: Uphold the highest standards of food safety, cleanliness, and hygiene in accordance with Australian health regulations.

Qualifications & Skills:

Experience: Proven experience in a commercial kitchen, with a deep understanding of Nepali cuisine and shop operations.
Culinary Expertise: Demonstrated skill in preparing traditional Himalayan dishes, particularly momos (wrapping and steaming) and classic noodle dishes.
Certifications:
Current Australian Food Safety Supervisor certificate.
Current RSA (Responsible Service of Alcohol) certificate.
Leadership: Ability to manage a kitchen team, coordinate workflow, and maintain high energy during busy service periods.
Reliability: A strong work ethic and a commitment to maintaining the MomoNBitze brand reputation.
Flexibility: Availability to work rotating shifts, including weekends, evenings, and public holidays.
