Full Job Description

Tiger's Milk Cantina Pty Ltd trading as Lima Cantina is a full-service Peruvian restaurant located in the heart of Leederville. We specialise in authentic Peruvian and Latin American cuisine, prepared using traditional flavours and contemporary restaurant techniques.

We are seeking an experienced and passionate Sous Chef to join our kitchen team on a full-time basis.

About the Role

Working as part of our kitchen team, the Sous Chef will assist with the day-to-day operation of the kitchen and help maintain the quality, consistency and authenticity of Lima Cantina's menu.

Key responsibilities include:

Preparing, seasoning and cooking high-quality dishes in accordance with Lima Cantina's recipes and standards.
Preparing authentic Peruvian and Latin American dishes using appropriate ingredients and cooking techniques.
Contributing to menu planning, development of new dishes and restaurant specials.
Monitoring food quality, taste, portioning and presentation throughout preparation and service.
Coordinating food preparation and cooking activities during busy restaurant service periods.
Assisting with the supervision, training and guidance of junior kitchen staff.
Monitoring food and ingredient requirements and assisting with ordering and stock control.
Checking ingredient quality, storage and appropriate stock rotation.
Maintaining appropriate portion control and assisting with the reduction of food wastage.
Ensuring compliance with food safety, hygiene and kitchen safety requirements.
Working closely with management and the kitchen team to maintain efficient kitchen operations and consistently high food standards.

About You

To be successful in this position, you will have:

Relevant commercial cookery qualifications or equivalent relevant experience.
Demonstrated professional experience as a Chef in a commercial restaurant environment.
Strong food preparation and professional cooking skills.
Experience with menu development, quality control and kitchen operations.
Ability to work effectively in a fast-paced restaurant environment.
Strong understanding of food safety and hygiene requirements.
Ability to assist with supervising and training kitchen staff.
Good communication, organisation and teamwork skills.
Experience with Peruvian or Latin American cuisine is highly regarded.
