Portarlington Grand Hotel – Portarlington VIC

Portarlington Grand Hotel is looking for an experienced and motivated Sous Chef to join our kitchen team.

We are looking for a chef with strong cooking skills who is also confident leading a kitchen team and managing service.

This is a hands-on leadership position working closely with the Head Chef to ensure the kitchen operates efficiently and consistently.

About the role

The Sous Chef will assist with the day-to-day running of the kitchen and take responsibility for the kitchen during services when required.

Your responsibilities will include:

Leading and managing the kitchen team during service
Working closely with the Head Chef on daily kitchen operations
Preparing and cooking across the menu
Ensuring food quality, consistency and presentation are maintained
Organising mise en place and ensuring the kitchen is prepared for service
Delegating tasks and supporting kitchen staff
Training and developing junior chefs and kitchen hands
Managing service when required in the absence of the Head Chef
Assisting with ordering, stock control and deliveries
Monitoring food safety, hygiene and cleaning standards
Helping control food wastage and maintain kitchen efficiency
Assisting with menu preparation and kitchen organisation

About you

We are looking for someone who:

Has solid experience in a busy commercial kitchen
Is confident leading a team
Can manage a busy service calmly and efficiently
Has strong cooking and organisational skills
Can communicate clearly with kitchen and front-of-house staff
Is reliable, responsible and takes pride in their work
Has a strong understanding of food safety and kitchen hygiene
Can maintain high standards under pressure
Is available to work evenings, weekends and public holidays as required
Wants to develop their career in kitchen management

Leadership and team-management experience is highly desirable.

We are looking for someone who can step into the kitchen, take responsibility and support the Head Chef — not simply someone looking for the Sous Chef title.
