Royale Patisserie is a family-owned artisan bakery established in 2006, based in Albany. We specialise in freshly baked bread, including authentic sourdoughs, organic and specialty loaves, as well as a range of sweet and savoury pastries, gourmet lunches, and barista coffee.
All products are made daily by our artisan bakers using traditional recipes and high-quality, locally sourced ingredients, including flour from a WA family-owned mill. We are committed to quality, freshness, and craftsmanship in everything we produce.
About the role
We are seeking a skilled and passionate Baker/Dough Maker to join one of Western Australia’s most respected artisan bakery teams. You will work alongside an experienced and supportive production team in a fast-paced environment, where consistency, quality, and food safety are key priorities.

Some of the key responsibilities are:
- Prepare, mix, ferment, shape, and bake a variety of doughs and bakery products according to company recipes and production specifications
- Weigh, measure, and combine ingredients accurately to ensure consistency, quality, and product excellence
- Operate commercial bakery equipment, including mixers, dough dividers, molders, rollers, and ovens safely and efficiently
- Monitor dough development, fermentation, and baking processes to achieve optimal texture, flavour, and appearance
- Produce a range of artisan breads, pastries, cakes, and other baked goods in line with daily production requirements
- Decorate and finish baked products using approved techniques, including glazing, filling, and garnishing where required
- Follow established recipes and production methods to maintain the signature quality and standards of the bakery
- Coordinate key production stages, including mixing, shaping, baking, cooling, depinning, and packaging of finished products
- Maintain strict food safety, hygiene, and Work Health and Safety (WHS) standards across all areas of production
- Ensure all work areas, equipment, and tools are cleaned, sanitised, and maintained before, during, and after production runs
- Assist in managing stock levels by monitoring ingredients, reporting shortages, and supporting ordering processes when required
- Work efficiently within production schedules to meet daily output requirements and maintain smooth workflow
- Collaborate with the production team to ensure consistent quality and timely delivery of all bakery products
- Support a positive, reliable, and team-focused workplace culture aligned with the values of the bakery
Skills and Qualifications
- Minimum of 1 year of proven experience as a Dough Maker in a commercial bakery, patisserie, or similar food production environment.
- Certificate III in Baking or a higher relevant qualification.
- Strong knowledge of dough preparation, fermentation processes, and dough handling techniques.
- Demonstrated ability to follow recipes, production schedules, and quality standards with precision.
- Excellent organisational and time management skills, with the ability to work efficiently in a fast-paced environment.
- High attention to detail and commitment to producing consistent, high-quality products.
- Ability to work independently as well as collaboratively within a team.
- Reliable, punctual, and committed to maintaining workplace standards and deadlines.
- Positive attitude, strong work ethic, and willingness to contribute to a productive work environment.
