We are seeking a passionate and skilled Sushi Chef / Omakase Chef to join our team and deliver an exceptional omakase experience.
About the Role
You will be responsible for:
- Fish filleting, portioning and preparation
- Preparing nigiri, sashimi and seasonal dishes to a high standard
- Maintaining consistency, presentation and food quality
- Supporting daily omakase service and kitchen operations
- Following food safety and hygiene standards
- Assisting with menu development and seasonal specials
- Working closely with the Head Chef and management team
Skills & Experience
- Minimum 3 years experience in a Japanese restaurant
- Omakase experience required
- Experience preparing nigiri and sashimi
- Strong knife skills and seafood handling knowledge
- Ability to work efficiently in a fast-paced environment
- Strong attention to detail and presentation
- Positive attitude and team-oriented mindset
- Valid work visa accepted for Australian work rights

Omakase Performance Standards
At Kentaro, precision, speed and consistency are essential.
Successful candidates should be able to:
- Prepare and serve nigiri confidently during service
- Shape and present a nigiri within approximately 10 seconds while maintaining quality, rice temperature and presentation standards
- Demonstrate strong service flow and time management skills
- Maintain exceptional cleanliness and organisation throughout service

Salary
$75,000 – $85,000 + Superannuation
(Depending on experience)
